 NA drinks

These drinks are considered non-alcoholic because of the negligible alcohol content. Think of it like adding vanilla extract to whipped cream. Even if you still enjoy an adult beverage every now and again, some of these are super refreshing. And don’t forget, bitters in seltzer is a great cocktail alternative!

TNT’S KACHUMBER COOLER

This cocktail is dedicated to Chef Floyd Cardoz. You are missed

2-4 Sliced Cucumber
2-4 Slices Jalapeño
1 Tbs Fresh Cilantro
0.5 oz Lime Juice
0.5 oz Simple Syrup
5 Dashes Fire In The Hole Poblano Bitters
Seltzer to top

Muddle everything but the seltzer in a glass. Add ice to fill the glass. Alternately, you can add 2oz of gin, blanco tequila, white rum, or vodka to this, taking it out of the NA drink world. This can also be blended in advance, simply leave out the seltzer. Once blended, it can also be frozen for up to 3 months in an airtight container.

bitter cider

1/2 gallon Apple Cider
2 Cinnamon Sticks, about 3” long each
1 Star Anise Pod
1 tsp Whole Cloves
1 tsp Whole Peppercorns
1 tsp (about 10 Dashes) Alibi Aromatic + Citrus Bitters

*Note: In place of the cinnamon, star anise, cloves, and peppercorns, you can use a 1/4 cup of prepackaged mulling spices.

Combine all ingredients in a saucepan over high heat. [If you want to make this with wine instead of cider, add a 1/2 cup of light or dark brown sugar and stir until it dissolves.] When boiling, remove from the heat and let steep for 20 minutes. Strain and serve in a mug by the fire.

POMEGRANATE TONIC

0.5 oz Pomegranate Molasses

1 oz Cranberry or Pomegranate Juice
5 Dashes Pink Mist Smoked Grapefruit Bitters

Combine the molasses and hot water and stir until molasses dissolves. Add cranberry juice and bitters. Fill glass with ice and top with tonic. Garnish with lemon or lime wedge and pomegranate seeds. This can be batched in advance too!

CRISP SPRITZ

Seltzer (plain or flavored…up to you!)
Juice of choice (we like cranberry)
10-20 Dashes Sucker Punch Lime Bitters

This drink is super simple. Fill whatever glass you’re using with ice. Add seltzer so it’s almost completely filled. Add in a splash of your juice of choice and top with the bitters. You can stir it if you want or just let the ingredients change the drink as you sip.

 food

Most people don’t know but you can use bitters in food too. Just as you would mix up a balanced drink adding the bitter element, you can do the same in a wide variety of dishes. From sauces to salad dressings, bitters just make it better!

HONEY LIME VINAIGRETTE

1 Tbs Dijon Mustard
1 Tbs Honey
1/2 c Apple Cider Vinegar
1/4 c Lime Juice
1.5 c Olive Oil
10 Dashes Sucker Punch Lime Bitters

Combine mustard, honey, vinegar, and lime juice in a small bowl or the bowl of a blender or food processor. Whisk or blend to combine. Add the olive oil slowly at first to emulsify it together then faster. If you would like more lime flavor, zest the lime before juicing it and add it in. Adjust with more honey or lime juice to taste. Season with salt and pepper if desired.

flavored royal icing

1.5 Tbs Meringue Powder
2 cups Confectioner’s Sugar, sifted
1 tsp Alibi Aromatic + Orange Bitters
4-5 Tbs water
Food coloring (optional)

Combine meringue powder, sugar, and bitters in a bowl. Using a stand mixer fitted with the whisk attachment, a hand mixer, or just brute strength, whisk to combine. Slowly add the water one tablespoon at a time, adjusting for ambient humidity until you reach your desired thickness. If using coloring, add it after a tablespoon or so of water. The food coloring can change the consistency so if you add it at the end, it can change the finished product.

6-8oz horseradish, strained in a dish cloth to remove excess liquid
1/2 tsp A Better Name Than Kamikaze Horseradish + Ginger Bitters

Combine strained horseradish and creme fraiche and bitters in a bowl and mix to combine. This makes a wonderful sauce to slather on meats or vegetables. We like to put it on seared beef tenderloin on perfectly baked crostini.

1 tsp A Better Name Thank Kamikaze Horseradish + Ginger Bitters

Combine all dressing ingredients in a small bowl and whisk vigorously. Toss with the cooked potatoes and scallions.

COFFEE BALSAMIC BBQ RUB

Olive Oil
Napalm In The Morning Espresso Bitters

Now add 2 tsp of the following ingredients:

CRANBERRY CITRUS COMPOTE

1 lb cranberries, fresh or frozen
0.5 cup light brown sugar
2 oranges, zest and juice
1 teaspoon Pink Mist Smoked Grapefruit Bitters

Combine cranberries, sugar, orange zest, orange juice, and bitters in a small saucepan. If using fresh cranberries, add a 1/4 cup water as well. Cook until all cranberries are burst and it has thickened, about 10 minutes overall.

1 Large Orange, Zested and Juiced
1 Grapefruit, Zested and Juiced
1 Lime, Zested and Juiced
6-10 Tbs Olive Oil
Salt to taste
1 tsp Pink Mist Smoked Grapefruit Bitters
Splash of Apple Cider Vinegar

Combine the zest and half of the juice from each fruit to start. Taste for balance (every fruit is different!). Drizzle the oil in slowly at first until emulsified and then faster. Taste and adjust with additional juice and salt. If the fruit is particularly sweet, add the splash of vinegar. Store in the fridge for up to a week.
